Balsamic Barbecue Chicken!

balsamic barbeque chicken lingolunchToday I am going to share with you one of my absolute favourite recipes. I discovered this delight whilst visiting friends in South Africa and although I don’t know how to say it in the Afrikaans language, in English we simply call it Balsamic Barbecue Chicken! The ingredients for this dish are neither difficult to find or expensive and by my calculations you should easily be able to feed about six people.

So first head to the supermarket and get yourself eight chicken breasts, a small onion, some olive oil, balsamic vinegar, sugar, ketchup, Worcestershire sauce, green onions, chicken bouillon, mustard, some garlic and a bottle of Tabasco sauce.

When you get home head straight in to the kitchen and chop up the small onion as well as four green onions and three cloves of garlic. Then mix these three ingredients with a quarter of a cup of olive oil, three quarters of a cup of the balsamic vinegar, three tablespoons of sugar, six tablespoons of ketchup, two tablespoons of Worcestershire sauce and one cube of chicken bouillon. Then also mix in a teaspoon of mustard and chuck in some salt and pepper for additional flavour.

You can then marinade the eight chicken breasts in half of your sauce mix for three hours. You can even leave them overnight if you prefer! When you are ready, take the breasts from the sauce and place under the grill for 20 minutes. Your nose will soon be able to tell when they’re ready so remove from the oven and serve with the remainder of the sauce! You can now also add a little bit of Tabasco sauce, per your preference.

This is a dish that will really get the taste buds going, enjoy with a cold beer on a hot day to truly get the authentic South African experience. Enjoy!
